HERDADE DA CANDEEIRA

Our vineyards feel the living sun of the Serra d’Ossa among the cork oaks of Herdade da Candeeira, weaving a blanket of lacey light that embellishes and refreshes them.

Vinification
​
​Controlled-temperature fermentation in stainless steel, followed by aging in 500-liter French oak barrels for 8 months.
​
Tasting Notes
​
Straw yellow in color, complex aromatic notes, with a dominant presence of ripe fruit, dried fruits, and a subtle hint of barrel aging. Full-bodied on the palate, with volume and firm persistence.

In the Esporão ampelographic field, 189 grape varieties are planted, of which 104 are white, in organic production. More than a hundred grape varieties with many different personalities, times and degrees of maturation, Portuguese and foreign varieties, known and unknown. That's how this wine started, in the fields, and that's why it's called “No Campo” (in the fields), bringing together 104 white grape varieties in the blend. Macerated in the press with foot treading, as an alternative to the usual way of vinifying white wines. Each of the grape varieties, with their individual characteristics, without makeup, are materialized in this complex wine with a unique character.

Vinification
​
Destemming followed by tanning for 5 days in the marble press with foot treading and controlled temperature. Spontaneous fermentation. After fermentation started, the must was transferred to a concrete tulip, where fermentation ended and remained in stage, with total lees, for 1 month. It was then removed to a stainless steel tank, where it remained for 8 months.

ERMO
arinto de barro WHITE
2021
The year was marked by some temperatures and precipitation fluctuations, being considered a normal year with some rainfall balance. The harvest began on 6th August. Fresh and elegant wines are expected.

Vinification
​
Harvest by hand. Gentle crushing and destemming, skin cold maceration for 48h before the start of fermentation, which took place at a controlled temperature, in a typical 750L amphora, for 2 weeks, with skin contact. Aged in fine lees, resulting in a wine with a fresh and textured character.
Tasting Notes
​
White wine with a clear lemon yellow colour. On the nose, the wine shows a very fresh and textured character, it has a second dimension dominated by earthy notes of the amphora. On the palate, the wine shows a very good texture supported with tension and acidity. This wine has an extremely gastronomic profile.

Vinification
​​
The grapes are hand-selected separately, the fermentation is in frustoconical vats with delestage. Ageing for 9 months in Frenck oak barrels.
Tasting Notes
​
Deep, concentrated plummy-red tones. Complex aroma of well-ripped red fruits. Full-flavoured, concentrated and with a long aftertaste. Food pairing: pork and beef dishes, oven-codfish dishes and hard cheeses.

“Herdade do Rocim” Indígena is the first organic wine produced by Herdade do Rocim.

Vinification
​
Manual harvest into 12 kg boxes. At the winery, the grapes were once again sensible triaged on a vibrating sorting table, fully destemmed and lightly crushed. Fermentation in concrete tank. Aging in concrete tank, for nine months.

Tasting Notes
​
Deep concentrated ruby colour, eucalyptus notes typical from the grape variety. Structure, concentration and acidity on a very fresh and energetic combination that will allow a good evolution in bottle.

A very irreverent, delicate and fresh "palheto" style of wine.
Vinification
​
This wine originates from a single plot of old vines, composed by a mixture of white and red grape varieties. The entire portion was harvested manually and in one go, into 20kg boxes. The selection took place of bunches and berries in the winery, where 50% of the bunches were de-stemmed and slightly crushed and the remaining 50% entered intact for fermentation. The must, in contact with the skins and seeds, fermented in a stainless steel tank at controlled temperature (24ºC / 26ºC).
Tasting Notes
​
Clear and bright wine, with a petroleum color and average intensity. On the nose, it suggests sweet red fruit, notes of watermelon, raspberry and blackcurrant in liqueur, mixed with a light floral. In the mouth, we have freshness, fine and elegant tannins, which combine perfectly with the sweetness of the fruit and a slight vegetal touch that makes us salivate and invites us to take another sip. A profile disconcerting, but very curious.
